There has been so much corn coming in the CSA, I’ve been grilling corn it seems like every night. Grilled corn is something I will never tire of. It’s super easy, delicious, and it pretty much goes with everything that you make for dinner in the summer.
The trick is to soak the corn in the husks before you grill it. This helps the husks not burn and the corn on the inside steam to perfection while your focused on whatever else you’ve got grilling. I usually soak the corn while chopping other veggies, marinating, or doing other food prep, so it’s typically between 20 minutes to 45 minutes.
I have the grill on medium heat. My grill has three burners, so I turn the front and rear to medium heat, and leave the middle one off. That’s how I’ve found to get the most even heat for grilling. Flip it after about 20 minutes. And grill for about another 20.
Perfection. The husk is dried out, but not charred around the corn. Although, if you like the char marks, you could always take the husks off for a little bare sizzle on the grill at the end.
When you pinch the husks, the silk comes right off, no problem. Super easy way to make corn. Very convenient when you have corn coming in your CSA box every week. I’m still not sick of it. Mmm.
