Breakfast Scramble

Look familiar?  It should.  I put together this delicious tofu breakfast scramble with the leftovers from the summer squash tacos.  I don’t know about you, but I LOVE leftovers.  I think as long as you think of the leftover as an ingredient and not something that you eat as a cold blob out of the fridge, you’re in for a treat.  The taco filling as well as the very few sweet potatoes that were left went into the scramble.

I love tofu.  It’s a versatile food and the perfect texture and flavor to use in a scramble.  I typically have firm or extra firm tofu hanging out in the fridge just waiting for a day like this.

A tofu scramble is a great easy breakfast that you can throw together in a few minutes.  First, I make the basic scrambled ‘egg’ part.  This is great to eat by itself.

Then if you have any leftovers to add, you can really get creative.  I added the squash taco filling and the sweet potatoes.  There weren’t many sweet potatoes left.

My favorite toast is the Ezekiel Sesame bread, toasted with a little spread of Earth Balance.  Mmm.

TofuScramble-3Top with avocado slices, hot sauce, Worcestershire sauce, or just a little salt and pepper.  Keep in mind how much seasoning is in the leftover veggies.  Taste test often and careful not to over salt.

Ingredients
Basic Tofu Breakfast Scramble
  • splash of olive oil for pan
  • 1 split package of extra firm, sprouted, organic tofu (my favorite are only about 8oz)
  • ¼ tsp turmeric
  • ¼ tsp cumin
  • ⅛ tsp Herbamare (or sea salt), +possibly more to taste
Instructions
  1. Put the oil in a pan, and heat over medium heat.
  2. Open the 8oz package of tofu and drain the water in the sink.
  3. Squeeze the tofu to get any excess water out, but no need to press for any length of time.
  4. Crumble the tofu in the pan and use a spatula to further break down the block into smaller bits.
  5. Add the turmeric and stir to combine completely. Marvel at the yellow color.
  6. Add the cumin and Herbamare and continue to stir, using the spatula to break down the chunks.
  7. When the consistency/fluffiness is to your liking.
  8. You can eat the scramble now or add any leftover veggies you may have floating around in your fridge, say from those squash tacos or something else.
  9. Stir until vegetables are heated all the way through.
  10. Enjoy!
